Do you love weekend breakfast as much as I do?? There is something so comforting waking up on a weekend and making a warm breakfast that requires maple syrup and makes my family happy!
I have been making my loves healthy gluten free banana pancakes lately and pancakes are a hit with our toddler so if you have been searching for a pancake recipe with good ingredients that the whole family will love, this is it!
I have tried many “health pancake” recipes and they all turned out mushy because of the banana and taste a little too banana’y 😉
Like I said these pancakes my 1 year old loves and actually eats 2 to herself! When I first made these I felt like I won the lotto! Finally something she would eat without me asking her to take another bite. So, what I have been doing is making a batch once a week (like I do with my gluten free chocolate chip cookies!) and putting the leftovers in the fridge and heating one up in the toaster to give it to her with an egg.
These healthy pancakes are super easy to freeze as well and the best way to reheat a pancake is the toaster!! Turn the toaster to the highest setting and let your kitchen fill up with the Sunday morning aroma….
My secret to making these pancakes super fun is to add a few dark chocolate chips to the batter. They are delicious with the chocolate, but not too many…just a few!
If you don’t want to add chocolate chips the pancakes are great without them or you could try blueberries added to the batter!
Also! It is important to me that our family is eating the best quality foods and I really trust the One Degree brand oats. These oats are not only gluten free, they are sprouted! So if you want to find really good oats for your oatmeal or for grinding up to bake, these are the ones I always suggest!

I love to top these chocolate chip pancakes with sliced banana, grass fed butter and pure maple syrup. But they are also delicious with warmed berries or even a cinnamon apple compote. Mmmm.
Healthy Banana Pancakes With Chocolate Chips
2 cups of Oat Flour (I grind up gluten free oats in my magic bullet!)
2 mashed ripe bananas
1 egg
2/3 cup milk (I use grass fed 2%)
1 tbsp maple syrup
1 tsp vanilla
1/4 tsp sea salt
1 1/4 tsp cinnamon
2 tsp baking powder
1/4 cup dark chocolate chips
Grass fed butter for your skillet
How To Make Your Healthy Banana Pancakes:
Grind your oats into a flour (or use oat flour) and mash your bananas!
Mix together all the ingredients in a big mixing bowl by hand.
Heat your skillet on medium (If you have a gas stove I find you will turn it lower after the first batch of pancakes)
Add your butter to the skillet and pour 1/4 cup of batter for your pancakes!
Cook for 2-4 min a side or watch for all the bubbles to pop and then flip!
Once your pancakes are done, grease the skillet again for the next ones!
For Noa, our toddler, I butter the pancakes and drizzle with pure maple syrup and cut them up into bite size pieces and she loves picking up each piece with her little fork and says “mmm”. If you’re a mom doesn’t it make your mama heart so happy when your child loves what you make for them?!
