Do you love weekend breakfast as much as I do?? There is something so comforting waking up on a weekend and making a warm breakfast that requires maple syrup and makes my family happy!

I have been making my loves healthy gluten free banana pancakes lately and pancakes are a hit with our toddler so if you have been searching for a pancake recipe with good ingredients that the whole family will love, this is it!

I have tried many “health pancake” recipes and they all turned out mushy because of the banana and taste a little too banana’y 😉

Like I said these pancakes my 1 year old loves and actually eats 2 to herself! When I first made these I felt like I won the lotto! Finally something she would eat without me asking her to take another bite. So, what I have been doing is making a batch once a week (like I do with my gluten free chocolate chip cookies!) and putting the leftovers in the fridge and heating one up in the toaster to give it to her with an egg.

These healthy pancakes are super easy to freeze as well and the best way to reheat a pancake is the toaster!! Turn the toaster to the highest setting and let your kitchen fill up with the Sunday morning aroma….

My secret to making these pancakes super fun is to add a few dark chocolate chips to the batter. They are delicious with the chocolate, but not too many…just a few!

If you don’t want to add chocolate chips the pancakes are great without them or you could try blueberries added to the batter!

Also! It is important to me that our family is eating the best quality foods and I really trust the One Degree brand oats. These oats are not only gluten free, they are sprouted! So if you want to find really good oats for your oatmeal or for grinding up to bake, these are the ones I always suggest!

I love to top these chocolate chip pancakes with sliced banana, grass fed butter and pure maple syrup. But they are also delicious with warmed berries or even a cinnamon apple compote. Mmmm.

Healthy Banana Pancakes With Chocolate Chips

2 cups of Oat Flour (I grind up gluten free oats in my magic bullet!)

2 mashed ripe bananas

1 egg

2/3 cup milk (I use grass fed 2%)

1 tbsp maple syrup

1 tsp vanilla

1/4 tsp sea salt

1 1/4 tsp cinnamon

2 tsp baking powder

1/4 cup dark chocolate chips

Grass fed butter for your skillet

How To Make Your Healthy Banana Pancakes:

Grind your oats into a flour (or use oat flour) and mash your bananas!

Mix together all the ingredients in a big mixing bowl by hand.

Heat your skillet on medium (If you have a gas stove I find you will turn it lower after the first batch of pancakes)

Add your butter to the skillet and pour 1/4 cup of batter for your pancakes!

Cook for 2-4 min a side or watch for all the bubbles to pop and then flip!

Once your pancakes are done, grease the skillet again for the next ones!

For Noa, our toddler, I butter the pancakes and drizzle with pure maple syrup and cut them up into bite size pieces and she loves picking up each piece with her little fork and says “mmm”. If you’re a mom doesn’t it make your mama heart so happy when your child loves what you make for them?!

Nothing beats the feeling of comfort when you bite into a freshly baked gluten free chocolate chip cookie.

Isn’t it the best to sit down with a cup of coffee and enjoy when the chocolate chips are still warm and gooey?

Since becoming a mom and working passionately on making the house a home for our family in my feminine, I have started baking again weekly. Gluten-free chocolate chip cookies are a major hit in our home and our guests love them too.

Baking is like therapy to me. I love putting on some music while I get my ingredients together and I enjoy the whole process. My weekly cookie baking goal is to always I take the butter out early while I sip my coffee on a Friday morning and have the cookies in the oven by 11am so when I have guests come by we all get to enjoy a cookie or two!

If you are a chocolate fan like I am, make sure to try these healthy sugar-free Twix Bars!

Back to the best chocolate chip cookies…

Honestly, I have made these specific chocolate chip cookies with all purpose flour (the gluten kind) as well and they have such a fudgy texture which I love. The gluten-free version are a bit fluffier, but they are still so delicious.

Although we don’t always stay away from gluten in our home, I make these cookies gluten-free more often because for some reason it signals my brain that I can eat more in a day without guilt ; )

The Best Gluten-Free Chocolate Chip Cookies:

1 cup coconut sugar

1/2 cup soft grass fed butter (I leave mine on the counter for a few hours)

1 egg

1 tsp vanilla

1/2 tsp baking soda

1 tsp warm water

1/4 tsp sea salt

1 1/2 cup gluten free flour (I use this 1 to 1 gluten free flour blend)

1/2 cup chocolate chips (I use the sugar free Lily Brand dark chocolate chips)

To Make The Best Gluten-Free Chocolate Chip Cookies:

Preheat oven to 350.

Mix the baking soda and warm water and have it ready for to be added.

Mix together the coconut sugar with the softened butter very well.

Add in the egg and the vanilla and mix. Add in the baking soda and water mixture to the dough.

Add the sea salt and gluten free flour and stir together until well combined and fold in the chocolate chips!

Drop large spoonfuls onto a parchment lined cookie sheet and bake for 10-12 minutes (or until the edges are golden brown)

I will have a chocolate chip cookie with my afternoon chaga tea and enjoy the peace while my daughter naps. This is my time to catch up on messages and work and enjoy some treats!

Here is a fun sugar-free, healthier twix bar that I know your family will love.

Healthy Twix Bar Recipe

First off I’ll say this…your healthy twix bars do not need to be sugar free like these ones are. You can make them with pure maple syrup and any chocolate of choice (milk or dark). But we’ll get to the recipe in a second!

Do you love chocolate bars as much as I do??

I have two food loves, dark chocolate and dark coffee.

Something I absolutely love to do is make treats for my family. If I have guests, I will get the baking in and the coffee on and let the aroma fill the house and I get so much joy when I see the look on everyone’s eyes when they see the final product being placed before them to bite.

If you’re anything like me, chocolate bars were where the allowance went. Well…Chocolate and Tiger Beat Magazines. I would save all week to then hop on my bike with my friends and peddle to the local market where I took forever to decide which chocolate bar would be my treat.

I was always deciding between a twix, kitkat, junior mints or mars.

Today I love chocolate and coffee. Back then it was chocolate and heartthrobs!

I haven’t had a milk chocolate candy bar like I used to in years. Ever since I overhauled my health and wellness, I make most of my treats or stick to healthy bars. The twix knock off I am sharing with with you today is made with good ingredients and I made them sugar free!

Isn’t it amazing you can still have chocolate bars and not feel like you have to sacrifice your health goals!

These “Healthy Twix Bars” are fun to make and really fun to eat!

Healthy Twix Bars:

Base:

1 Cup Oat Flour (Or Almond Flour)
2/3 Cup Coconut Flour
1/3 Cup Sugar Free Syrup (or Real Maple Syrup)
1/4 Cup Melted Coconut Oil

Caramel:

1/3 Cup Peanut Butter (or Almond Butter / Sunflower Seed Butter)
1/2 Cup Syrup
1 tsp Coconut Oil
1/4 tsp Sea Salt

Chocolate:

1 1/2 Cup Lily’s Dark Chocolate Chips (or Any Chocolate of Choice)
1 Tbsp Coconut Oil

How to Make Your Healthy Twix Bars:

Preheat your oven to 3745.

Mix the dry ingredients together and add in the wet and mix together.

Pat the twix base ingredients into a parchment lined loaf pan.

Bake for 18-20 minutes (check to see if it is starting to brown on the edges.

Remove from the oven and let cool.

In a small sauce pan, heat up the peanut butter, syrup and coconut oil until it is well combined and runny like caramel!

Pour the caramel mixture onto the base (still in the loaf pan) and spread it evenly.

Place the pan into the freezer and freeze for 4 hours.

Once the base and caramel are frozen (after the 4 hours), remove from the loaf pan and cut into 10 bars.

Melt the chocolate and coconut oil (I did this on the stove on low) and use a fork to dip each bar into the chocolate and coat. Place the bars on a cooling rack with parchment under it as it gets messy!

Drizzle chocolate onto any pieces that did not get coated.

Place in the fridge for 2-30 minute and enjoy!

* NOTE: Some might break when you dip them in the chocolate. That’s ok! Enjoy the pieces big or small.
You can always cut the 10 bars in half before dipping to make them “mini Healthy Twix Bars” 😉

My husband and daughter really enjoyed these Healthy Twix Bars and next time I will try them with pure maple syrup.
